Il Valpolicella  Classico Ripasso is made with grapes used to produce it are  Corvina, Corvinone, Rondinella, Molinara;

Winemaking consists of a fermentation of 15 days in stainless steel vessels, then wine is moved in other stainless steel vessels for 1 year.  Oak barrels lasts 4-5 months.

Characteristics

It displays a deep ruby almost garnet red, with a subtle orange vein, due to the long ageing.

Bouquet is surprisingly wide and fragrant, merging ginger flavour, pepper, plum and black cherry notes.

It’s complex, balanced and slightly tannic in taste.

Recommended pairings

It can be perfectly paired with white and red meat.

It should be served in a wide glass at ambient temperature. We suggest to uncork the bottle some minutes before serving.
